Lunch or dinner at The George Grill begins long before the plates arrive. It starts in the local landscape: the rolling Romney Marsh, the bobbing boats at Rye Bay, and the orchards of Kent. Our kitchen cooks in harmony with the seasons and sources from local producers who have farmed and fished their fields and waters for generations. Menus are shaped by what’s freshest and closest — our fruit and vegetables are grown just miles away, reinforcing a sense of place and community.
At the heart of the Grill is the Josper charcoal oven, whose charcoal heat gives dishes their depth: seared edges, soft centres, that unmistakable whisper of smoke.
Steaks are where the Josper shines. The 10oz Dry-Aged Rib Eye comes deeply caramelised, the fat just beginning to crisp. The 28oz Côte de Boeuf, aged in-house from grass-fed Aberdeen Angus, arrives sliced to share.
Its touch extends beyond beef. Josper Pork Sausages, glazed with honey and mustard, arrive golden and blistered. Grilled Octopus is tender from slow cooking, then charred lightly to bring out its sweetness. Seasonal vegetables are carefully chargrilled to intensify their flavours. Cured Chalk Trout, Smoked Avocado and Soy Dressing is light, lively, and perfect with a glass of English sparkling wine.
For something light, Burrata with Heritage Tomatoes and Wild Rice is as vibrant as Rye on a summer afternoon.
This attention to detail is echoed in the restaurant’s inimitable design touches which allow the light to adjust throughout the week to reflect different times and moods.
At lunchtime, the room is bright and relaxed — a place for the much-loved Steak Frites served Monday to Saturday.
By dinner, candles glow against timber walls, glasses catch the light, and Josper-grilled meats take centre stage.
On Sundays, the dining room fills with the comforting scent of Roast Sussex Beef, Yorkshire pudding, and rich gravy… a tradition reimagined with care and quality.
