To fire up this year and keep warm, this month we got in the kitchen with our head chef, Oscar. Originally from Columbia, Oscar has been with us – and at the helm of The Grill – since April last year. With an extensive experience of travelling and working with various cuisines, he cites flavour profiles found in South-American, Asian, African and Middle-Eastern cuisine amongst his favourites. He especially likes to cook on an open fire and will never be found far from his beloved pestle and mortar. We are so happy to have him here and feeding us so well!
What brings you to The George?
I came to the George because I wanted to work closer to home and take up the opportunity here in Rye to try to offer something different… and great! My passion for food fits really well with the grill concept that we are working on to contribute positively to our guest experience, our surroundings and the local community.

What is your earliest hotel memory?
Hotel Santa Clara, Cartagena – Colombia. Simply amazing.
What is the best/most important part of staying away in a hotel for you?
To really go to the core of it, the most important things for me in a hotel are the beds and the cleanliness.
What are you currently reading/binge-watching/listening to?
A Long and Messy Business by Rowley Leigh.
Hypothetically, who would you most like to discover is a fellow guest?
Chef Sean Brock.
